Turkey Tetrazzini

Ingredients

  • 3 cups diced cooked turkey

  • ½ pound sliced mushrooms

  • 6 tablespoons butter, divided use

  • 2 tablespoons flour

  • 2 cups chicken broth

  • 4 ounces gruyere cheese, cut into bits

  • 3 tablespoons sherry

  • 1 cup heavy cream

  • ½ pound spaghetti

  • ½ cup grated parmesan cheese

  • ½ teaspoon black pepper


Steps

  1. Add 3 cups of diced cooked turkey to a large bowl

  2. Melt 2 tablespoons of butter in a frying pan

  3. Add a ½ pound of sliced mushrooms to the pan and saute for 5 to 7 minutes

  4. Transfer the sauteed mushrooms to the bowl with the turkey, keeping the pan to the side

  5. Separately, bring a large pot of water to a boil and cook a ½ pound of spaghetti according to the packaging directions until al dente

  6. Meanwhile, add the remaining 4 tablespoons of butter to the frying pan and melt over medium-low heat

  7. Stir in the 2 tablespoons of flour and a ½ teaspoon of black pepper, mixing vigorously until smooth

  8. Gradually pour in 2 cups of chicken broth, stirring constantly until the mixture is bubbling

  9. Add the sherry, gruyere cheese, and heavy cream

  10. Cook over low heat until the cheese is melted, stirring the entire time

  11. Add the cooked spaghetti to the bowl with the turkey as well as the sauce

  12. Toss until everything is incorporated

  13. Lightly grease a 9 by 13 inch baking dish and transfer the mixture into the pan

  14. Sprinkle a half cup of grated parmesan cheese on top

  15. Bake the turkey tetrazzini in the oven at 350 degrees Fahrenheit for 30 minutes until bubbly and heated through
