Zucchini Bread
Ingredients
1 cup walnuts
2 cups sugar
1 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
3 teaspoons cinnamon
4 tablespoons cocoa powder
1 cup chocolate chips
3 ½ cup flour
3 cups shredded zucchini
Steps
Spread 1 cup of walnuts onto a small tray
Toast the walnuts in the oven at 350 degrees Fahrenheit for 10 minutes and remove when fragrant
Roughly chop the toasted walnuts into small pieces
Use a food processor grater attachment or the large holes of a box grater to grate 3 cups worth of zucchini
To a mixer bowl, add 2 cups sugar, 1 cup vegetable oil, and 4 eggs
Affix the paddle attachment to the mixer and beat to cream the sugar, oil and eggs all together until combined
Add 1 teaspoon of vanilla extract, 1 teaspoon of baking powder, 2 teaspoons of baking soda, 1 teaspoon of salt, 3 teaspoons of cinnamon, 4 tablespoons of cocoa powder, 1 cup of the chopped toasted walnuts, and 1 cup of semisweet chocolate chips
Turn the mixer on and mix until everything is combined
Add 3 ½ cups flour to the batter and mix once more until the flour is just incorporated
Add 3 cups of shredded zucchini and mix again
Scrape down the sides of the mixer bowl as needed to ensure everything gets combined and mix one last time
Pour out the zucchini bread batter into a 9 by 13 inch greased baking dish
Bake the zucchini bread in the oven at 350 degrees Fahrenheit for 45 to 50 minutes
Remove the bread from the oven when a toothpick inserted in the center of the bread comes out dry
